As I mentioned earlier this week, while I was doing my challenge of getting up early to do some yoga and go for a walk, I have also been really enjoying having warm and tasty banana porridge for breakfast. Porridge (or oatmeal as Americans call it) is a great breakfast for winter, not only is it warm and yummy but if made right it can be very good for you, low GI so you feel fuller for longer and without added sugars or butter like some porridge recipes. Here is the recipe I use to make enough for one person each morning, and it is so fast and easy!
Healthy Banana Porridge for One
Ingredients:
1/2 cup oats
1 cup milk
1 small ripe banana – sliced
A smidgin of vanilla essence – yes that’s the official measurement π
A sprinkle of cinnamon
Some swirls of honey
Method:
Put all ingredients except the honey in a small pan and cook over a low heat, stirring regularly.
Let it come to a slow boil and let it bubble away gently (while still stirring) for a few minutes until it reaches your desired consistency. I like mine nice and thick, but not too thick.
Pour it into a bowl and top with a few swirls of honey. The banana, honey, cinnamon and vanilla make it so tasty and sweet, without any need for added sugar or butter. Enjoy!
